BBP Brisket

Smoker Style

1    ea.    Packer Trimmed Brisket, 7-8 lbs.

1    ea.    Bottle BBP

Trim any excess fat off of brisket.  Sprinkle BBP generously on both sides of the brisket.  Place brisket on smoker rack with fatty side up.  Using mesquite hardwood, keep smoke present for about two hours at about 225 Deg F.  Remove brisket and wrap in foil.  Continue cooking at 250 to 300 Deg F for additional 4 hours.  For this part of process you can actually place foiled wrapped brisket in conventional oven to help maintain heat.

Remove brisket from smoker or oven and slice.  Trim off unnecessary fat.  Serve with Bubba-Q-Sauce, Tater Salad, Cole Slaw and refreshments.  You may want to sprinkle a little more BBP your serving.
