2 1/2 lbs. Shoulder clod, cut into 1" cubes or
2
lbs. Ground beef (1 lb hamburger, 1 lb
chili meat is really good)
++++++++ 1st Group of Seasoning
1 lg. yellow onion
1/2 tsp. paprika
1/4 tsp. oregano
1/2 Tbsp. thyme
4
cloves garlic, pressed or finely chopped
++++++++ 2nd Group of Seasoning
1 1/2 Tbsp. cumin
1/2 Tbsp. black pepper
3/4 tsp. white pepper
1/4 tsp. sugar
3 Tbsp. chili powder
8 oz. tomato sauce
1 Tbsp. Lowry's Season All Salt
Brown meat and onion, add enough water to cover the meat and add the first group of seasonings (usually about 2 cups of water). Simmer for 30 minutes, covered, 15 minutes if using ground beef.
Add second group of seasonings and continue to cook for 15 to 30 minutes. May need to add 1/2 cup of water, just to keep consistency correct.
Add salt and cayenne pepper to taste. Add 16oz. can of Rosarita refried beans to finish.
Serve with cold beer and fresh tamales.
