Ingredients:
2 1/2 lbs. Shoulder clod, cut into 1" cubes
-OR-
2 lbs. Ground beef (1 lb hamburger, 1 lb chili meat is really good)
1st Group of Seasonings
1 large yellow onion
1/2 tsp paprika
1/4 tsp oregano
1/2 Tbsp thyme
4 cloves garlic, pressed or finely chopped
2nd Group of Seasonings
1 1/2 Tbsp. cumin
1/2 Tbsp. black pepper
3/4 tsp. white pepper
1/4 tsp. sugar
3 Tbsp. chili powder
8 oz. can tomato sauce
1 Tbsp. Lowry's Season All Salt
Salt to taste
Cayenne pepper to taste
16 oz can Rosarita's refried beans
Preparation
Brown meat and onion, add enough water to cover the meat and add the first group of seasonings (usually about 2 cups of water). Simmer for 30 minutes, covered, 15 minutes if using ground beef.
Add second group of seasonings and continue to cook for 15 to 30 minutes. Add salt and cayenne pepper to taste. Add 16oz. can of Rosarita refried beans to finish.
Serve with cold beer and fresh tamales.
